As with other sweet good products, temperature, consistency, product makeup, and stickiness play key roles in the cut quality of marshmallows. While a variety of portioning technologies can be used to cut gourmet marshmallows including single wires, wire harps, and ultrasonic blades, we’ve found that our mechanical machines using stainless steel blades often offer the best cut quality at an economical investment for small, medium, and large scale production facilities.
For small bakers creating marshmallow treats the CS-RS is our base level semi-automatic half sheet slicing machine. This unit is designed to cut half sheets and combines an automatic blade stroke with manual indexing with the machine operator pushing the product holder platform into position for each slice. One operator can cut up to 100 half sheets of gourmet marshmallows per hour with the CS-RS.
To meet the needs of larger producers or bakeries using full sheet pans our CS and ACCUSLICE™ lines offer semi-automatic and fully automatic solutions. The CS-10TFWA is a semi-automatic machine, using a hand crank to index the product while making automatic cuts, and can portion up to 100 full sheets per hour. The CS-10TWWA and ACCUSLICE-10MX are both fully automatic and can slice from 120 to 150 full sheets per hour, depending on the product makeup, cut pattern, and final portion size.
