Cutting With Mechanical Blades

The CS-10TWWA is a mechanical cutting machine that portions frozen, chilled or hard products into squares or rectangles with a stainless steel blade. A full sheet, or multiple smaller sheets, are loaded onto the platform and with the push of a button the machine automatically indexes the product into position for cutting. Once the X and Y axis slices are finished the product is returned to the operator to be unloaded. Mechanical automation means that the products are cut perfectly every time, no matter who is operating the machine.

Cut In Or Out Of The Pan

Sheet products can be depanned and sliced on a cutting board or custom product holder, or the products can be left inside the pan and portioned with a custom cut pattern and notched blade. This can save time by not depanning the products before slicing, but may also leave small uncut portions in the finished product. The cutting experts at Kanchan work closely with their customers in India to find the most accurate and efficient way to portion their products.

Cutting With Ultrasonic Technology

Some products at warmer or ambient temperatures achieve better cut quality using our ACCUSONIC® line of ultrasonic slicing machines. Ultrasonic blades vibrate at 20kHz, fast enough that most products cannot stick to the blade. This allows food production plants to slice fresh, ambient and sticky sweet goods without crushing, dragging, or destroying the product. This sheet of soan papdi was sliced with an ACCUSONIC® ultrasonic cutting machine.

Cutting Unique Shapes

Kanchan has also worked with bakers to slice sheets of sweets into unique shapes, including this kaju katli sheet cut into diamonds. Slicing unique portions like this requires servo driven indexing and a bit more engineering, but can be an option for Indian sweet good manufacturers looking to differentiate their products.
