Ultrasonic blades can effortlessly portion warm, sticky, delicate bakery products, but without proper maintenance the blades can break or transducers can overload, causing not only poor cut quality, but production downtown and equipment expense. The good news is that ultrasonic stack maintenance is simple and we recommend adding it to your regular preventative maintenance schedule.

ULTRASONIC STACK MAINTENANCE INSTRUCTIONS

To properly maintain your ultrasonic stack you will need a sheet of sandpaper or emery cloth of 500 grit or higher, a set of Allen keys, two ultrasonic spanner wrenches, and a torque wrench adapter which you can purchase from FoodTools.

Once you have removed the ultrasonic stack from your machine, place it on a level table and protect the tip of the blade with a blade cover or piece of cardboard. To disassemble the stack use the ultrasonic spanner wrench to remove the blade from the booster. Next, remove the booster from the transducer and use the Allen wrench to take the studs out of the blade and booster. With everything disassembled check that the stud holes and studs are clean from dirt and debris.

Using the emery cloth, lap the connection surfaces of the blade, booster, and transducer. Lapping is most effective when using a crisscross pattern, turning the surface 90 degrees with each pass. Lapping is complete when you are no longer able to see discoloration or debris.

In order to reassemble the stack begin by inserting the studs into the blade and transducer and tighten with a hex key. Next connect the blade to the booster, and then the booster to the transducer. All joints should be torqued to the specified level in your owners manual. Be sure to use a torque wrench to apply the right amount of torque to each joint.

Ultrasonic stack maintenance should be performed anytime the ultrasonic system sounds or operates abnormally. Be sure to add ultrasonic stack maintenance to your preventative maintenance schedule to improve the longevity of your system.
