One challenge when slicing products like fudge can be inclusions. Any inclusions make automated portioning a bit more complicated as the mechanical process needs to account for differences in product density and hardness. If the blade has too much resistance or the temperature is not on target the more dense inclusions may be pushed through the product instead of being cleanly sliced. Most FoodTools portioning machines being used to slice fudge use mechanical stainless steel blades. The CS-RS is a half sheet slicing machine and is perfect for smaller, more artisanal facilities using half sheets or cutting them down to size. It can also be used to cut round cakes and pies with additional product holders and makes for a very versatile solution. The CS-10TFWA is a semi-automatic full sheet slicing machine and is still great for smaller production facilities needing an economical solution with the ability to slice full sheets.

Both the CS-10TWWA and ACCUSLICE-10MX are full sheet slicing machines and include full automation in the cutting process. The CS-10TWWA uses mechanical and pneumatic indexing for the cut pattern, while the ACCUSLICE-10MX integrates a servo driven platform and product holder allowing the bakery to cut diamonds, triangles and parallelograms as well as rectangle and square shapes. For very difficult to slice fudge products our sales team works with bakeries to use ultrasonic cutting blades in our ACCUSONIC™ and RPS lines of equipment.
