For some bakeries it works best to depan the product, slice it, and then package each portion individually. For other bakeries the process is different…the full sheet is baked, then sliced, and sent to a retail outlet to be sold per portion. In this case the products do not need to be depanned and individually packaged…instead the entire sheet of product can be cut in a bake-in-the-box, sealed and shipped straight to the retail counter.

For other bakeries it just makes more sense in the production process to cut a full sheet of product in the pan and re-rack the pans until the packaging process begins. For this type of production sheet products can be sliced in boxes or metal pans depending on the product, temperature, and type of machine. Custom mechanical and ultrasonic blades can be made specifically to fit the baking pans so that the product is sliced completely to the edge.

FoodTools round cake slicing machines can also be fitted to cut pie products in pie tins and pans. The machines use custom shaped blades that fit perfectly into the pan or tin. Under the pan a special product holder is designed to support not only the bottom of the tin, but also the angled sides to ensure an even cut which does not destroy the container. After being cut (with or without Divider Inserts) the pies can then be packaged and shipped whole or separated and sold as individual slices.
